I am travelling Bangor-Nice tomorrow. Should I upload that trip in its 3 separate journeys (3 trains) which take place on the same day, or as one. The proposed journey on the planner does not have the Eurostar time for the train I have a reservation on.

You can do it either way. I tend to add the trains individuallyy, because it makes it easier to choose the exact trains you want.
The Eurostars are all shown with an incorrect departure time - 35 minutes earlier than reality, This is apparently a Rail Planner feature, rather than a bug, though you could have fooled me! If you click deeper, you’ll see the correct departure time and train number.
