As my wife and I approach our 80s, and having eschewed travelling by plane, we feel we want the added comfort and ease of 1st class rail travel.  We have used interrail a number of times previously for special journeys, but assumed that it would not be cost effective for a straightforward trip to Italy and back.  To my cost (literally), I have discovered that is not the case.  So in December, returning January we are going London -Paris-Lyon-Milan-Venice and then back - a total of four days of travelling.    Aside from the London to/from Paris journey, we are booking 1st/Business class seats.   As is often the way, you book tickets for various stages as the tickets become available.  All has now been booked apart from the Venice/Milan journeys where tickets are not yet available.  What is clear now, is that if I had gone through the interrail option, purchasing two 4 day 1st class pass, we would have saved around £100.   We would have also saved ourselves having to deal with dynamic pricing, knowing precisely the cost of our trip from the start.

In some countries, interrail pays off "quickly". Thats why, I usually check for planned trips separate ticket prices before. And, if I just buy a pass in a promo, before knowing my plans, I make sure to get separate ticket price out of it. So if I see a certain leg of my trip is just like 15 euro, I book it instead of wasting a travel day. If I end up having spare days in the end, I do day trips from my home. Lucky me to live in a 3 countries border area, so not necessarily needing an outbound day to leave my country.
