Hello,  okay, let s travel in our minds together:

20 th to 25th October from munich to Strasbourg,

Strasbourg to Perigeaux,

Perigeaux to Toulouse,

then need to be back in Berlin  between 1st November and 8th November.

travelling with 14 years child.

on the pass ideally also: one trips to Spain. Berlin (or Munich) to Alicante. have to reach on 16th December and leave (possible also by plane return).   additional tours … Bordeaux … Madrid  are optional.

best with Eurorail or single tickets. … have not been travelling like this for a while.

What does "best” mean for you? If you mean cheapest, then you'll have to do the maths yourself.

Also note that "Eurorail” isn't a thing. The pass is called Interrail.

Keep in mind a global Pass is only valid in your home country on 2 travel days.

Also france and spain have mandatory reservations on highspeed trains (dont forget to include them in your calculation as they quickly add up)

You'll need to pay for 2 days in Germany indeed, normally the cheapest ones. From Munich, you could travel via Austria, so the route in Germany is short, e.g. Munich-Kufstein.
