SNCF opened its sale for the end of year period (Dec 13 onwards) today but I can’t find any train here when looking at booking a seat.
Any idea when this will be available?

Book elsewhere, for example on raileurope.com. They show reservations for dates after the timetable change.

If I book through B-Europe, they need the pass cover number. However, I only have the mobile pass number. I asked Interrail customer service, but I haven't received a reply yet.

They also accept the mobile pass number. They just did not update the explanatory caption for the field.
If you are just booking 1 reservation, then Allaboard or Rail Europe (always in euro!) will be cheaper.
